Hummingbird Cake Recipe: Using ripe bananas and crushed pineapple makes this hummingbird cake easy to make. It has a sweet cream cheese frosting on top, making it a dessert that will surely please! For a special event, crush some more nuts and press them into the sides of the frosting.

Mrs. L.H. Wiggins of Greensboro, North Carolina, was the one who initially submitted the Hummingbird Cake to Southern Living in 1978. At the time, we had no clue that the cake would go on to become our most well-known and cherished Southern cake recipe ever. Without a shadow of a doubt, the cake is a work of art, with its three luscious layers that are topped with cream cheese frosting and pecans; however, the flavor is what truly keeps us going back for more on more occasions.



  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups mashed bananas
  • 1 ½ cups canola oil
  • 1 cup chopped black walnuts
  • 1 (8 ounce) can crushed pineapple, drained
  • 3 large eggs

Cream Cheese Frosting:

  • 1 pound confectioners’ sugar
  • 1 (8 ounce) package cream cheese, softened
  • ¼ pound butter, softened
  • 1 teaspoon vanilla extract


  1. Gather everything you need. Turn the oven on to 350 degrees F (175 degrees C). Two 9-inch cake pans should be greased and floured.
  2. How to make the cake: In a big bowl, mix the flour, sugar, baking soda, and salt by sifting them together. In a different big bowl, mix the bananas, oil, walnuts, pineapple, and eggs together well.
  3. Make sure the flour mixture is thoroughly mixed with the banana mixture. Pour batter into the pans that have been prepared.
  4. Bake for approximately one hour in an oven that has been preheated until a toothpick that has been inserted into the center of each pan comes out clean. Cakes should be allowed to cool on wire racks.
  5. Make the icing in the meantime: Confectioners’ sugar, cream cheese, butter, and vanilla extract should be mixed together in a medium bowl until they are completely smooth.
  6. Spread frosting in an even layer on the top, sides, and middle of the cake after it has cooled.
