Easy Italian Pear Cake Recipe:- This recipe for Easy Pear Cake is a straightforward Italian cake that can be enjoyed as a snack cake in the afternoon, a breakfast cake in the morning, or even as a dessert with a dollop of vanilla ice cream. It is delicious at any time of the day because it is made with light and fluffy mascarpone and fresh pears.

When I arrived in Italy, I found out that baked goods, specifically cakes that were made from scratch on a daily basis, were not frosted very often, if at all. However, the majority of the time, they were sprinkled with icing sugar or cocoa that was not sweetened.

The perfect cake for anyone who enjoys a cake with a lower level of sweetness is this one, as well as my simple yoghurt cake. Nothing more than a light dusting of powdered sugar will do!

In addition, if you so desire, you can incorporate some pecans or walnuts that have been finely chopped into the cake batter.

 

Easy Italian Pear Cake Recipe

 

 Ingredients

  •  1/2 cups all purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup + 1 1/2 tablespoons cornstarch (43 grams in total)
  • 1 1/2 teaspoons teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3 large eggs (room temperature)
  • 3/4 cup sugar
  • 1 cup mascarpone (room temperature)
  • 2 1/2 tablespoons vegetable oil (I use corn or sunflower oil)
  • 2 medium pears (room temperature)*

Instructions

  • Preheat the oven to 340 degrees Fahrenheit (170 degrees Celsius).
  • Prepare an 8 or 9-inch (20-23 cm) cake pan by lightly greasing and flouring it. I used a spring-form pan for this.
  • The pears should be cleaned and peeled, and then one of them should be chopped into medium-sized cubes, while the other should be sliced into thin slices and set aside.
  • In a bowl of medium size, combine the flour, salt, corn starch, baking powder and baking soda by whisking them together.
  • In a medium bowl, beat the eggs and sugar together at medium speed until they become creamy, which should take about two minutes. After that, add the mascarpone and continue beating until the mixture is smooth.
  • Using a wooden spoon, incorporate the flour mixture into the creamed mixture. After gently combining the two, add the oil and continue to stir until everything is incorporated.
  • Place the pear cubes of a medium size into the prepared cake pan and fold in the pear.
  • A topping of sliced pears and a dusting of granulated sugar equal to two tablespoons (40 grammes) is recommended.
  • Bake for approximately forty-five to sixty minutes, or until a toothpick inserted into the centre pulls out clean or with a few crumbs attached. After allowing it to completely cool, serve. Have fun!
